Shortcrust Pastry

This is a basic shortcrust pastry. It is sugar free making it perfect for your savoury needs.

INGREDIENTS

  • 250gm Plain Flour
  • 125gm Cold Butter, cut into cubes.
  • 1 Tbsp Cold Water
  • 1 Egg Yolk, optional
  • Pinch of Salt

METHOD (using food processor)

  1. Place flour, butter, salt and egg yolk (if using) into the bowl of a food processor.
  2. Pulse until fine bread crumbs appear. Do not over process!
  3. Remove the lid from the food processor and pinch a little mixture between your fingers. If it holds together remove it from the bowl onto a lightly floured surface. If it is too dry and doesn’t hold together, return lid and add water whilst processor is running.
  4. If it holds together remove it from the bowl onto a lightly floured surface.
  5. Bring the mixture together with your hands, until just combined. Do not handle too much as it will shrink when cooked.
  6. Wrap in plastic wrap and refrigerate for 30 minutes to rest.
  7. Remove from fridge and roll to your desired size and thickness.

METHOD (by hand)

  1. Place flour, butter, salt and egg yolk (if using) into the bowl.
  2. Rub the butter and flour together until fine bread crumbs appear. Do not over mix!
  3. Pinch a little mixture between your fingers. If it holds together remove it from the bowl onto a lightly floured surface. If it is too dry and doesn’t hold together, add water to moisten and bring together.
  4. If it holds together remove it from the bowl onto a lightly floured surface.
  5. Bring the mixture together with your hands, until just combined. Do not handle too much as it will shrink when cooked.
  6. Wrap in plastic wrap and refrigerate for 30 minutes to rest.
  7. Remove from fridge and roll to your desired size and thickness.

NOTE: Egg yolk is optional. It aids in enriching the dough and gives a lovely yellow colour. Flour will absorb different amounts of water as a result, always add a little at a time. You may not need the whole 1 Tbsp or you may find you need more. Add with caution because you can always add it but never remove it!
